Lox and onions and eggs

1⅓ | cup | Onions; minced |
½ | pounds | Lox or smoked salmon; chopped |
8 | Eggs; beaten just to combine white and yolks |
Directions
Prep: 5 min, Cook: 5 min. Melt butter in a heavy nonstick skillet over low heat. Saut onions 3-4 minutes until very soft but not brown. Stir in lox and cook 1-2 minutes. Add eggs. Turn heat to very low and gently stir until eggs are set. Serve immediately.
