Lunch-box oatmeal raisin bars

Ingredients

Quantity Ingredient
cup Packed brown sugar
cup Butter or margarine
cup Golden corn syrup
cup Rolled oats
¼ cup All-purpose flour
½ cup Raisin or chopped dried apricots
1 Large egg
1 teaspoon Vanilla

Directions

PREHEAT OVEN TO 375

In a glass bowl, combine brown sugar, butter and corn syrup. Microwave at High 2 minutes; stir until smooth. Microwave 1 minute more or until sugar dissolves and mixture comes to a full boil.

Stir in rolled oats, flour and raisins. In a small bowl, beat egg with vanilla. Stir into rolled-oats mixture.

Spread evenly in prepared pan. Bake for 20 to 25 minutes or until golden around edges. Let cool 10 minutes in pan. Lift out foil; cut into 3 by 1 1½ inch bars. Transfer to a rack to complete cooking. Yield: 24 bars Typed in MMFormat by cjhartlin@... Source: Fast & Easy Cooking Oct. 25/99
