M`hemmer omelette

Directions
Here is a Moroccan recipe that my mother-in-law makes. It sort of sounds like what you ate, except that it has peas & carrots instead of peppers & tomatoes. Maybe you can try to substitute one for the other.
Boil the peeled potatoes then mash coarsely. Add the peas & carrots, S & P and chopped parsley. Add the eggs 1 at a time & mix in with a spoon. Either spray a large springform pan well, or put in the oil & heat over a medium flame. Pour into the pan & bake at 375' for about 45 minutes or until the omelette is golden. Allow to cool a bit before unmolding.
I loved this omelette from the first time I ate it at my mother-in-law`s in Israel.I hope this is what you`re looking for.
