Ingredients

Quantity Ingredient
6 Chicken breasts
¼ cup Corn oil
cup Minced onions
teaspoon Chopped green pepper
½ cup Fresh mushrooms
1 Tomato; chopped
½ cup Tomato juice
¾ cup Grated low-fat cheese

Directions

Boil & debone chicken. Chop meat into bite size pieces & saute in corn oil, adding onions, green pepper & mushrooms. Pour into casserole & add tomato & juice. Mix thoroughly. Cover with cheese & bake at 325 for 25 minutes.
