Mexican pepper chicken

Ingredients

1 Medium Onion, chopped
1 Clove Garlic, crushed
2 tablespoons Vegetable Oil
1 tablespoon Chili Powder
1 tablespoon Crushed Red Peppers
1 pounds Boneless & Skinless Chicken,
Cut into strips
1 Each Green & Red Pepper,
Cut into strips
1 cup Chili Sauce
2 tablespoons Red Wine Vinegar
Cooked Rice *

Directions

Cook and stir onion and garlic in hot oil until onion is softened. Add chili powder and crushed red peppers and cook gently 5 min longer, stirring occasionally. Add chicken and cook over medium heat for 5 min, stirring frequently. Add peppers, chili sauce and wine vinegar, bring to a boil and simmer for 15 min, stirring occasionally. Serve over cooked rice.

Chili rice mix can be substituted for plain rice.
