Mike's salse di pomodoro alla puttanesca

2½ | cup | Canned plum tomatoes, peeled |
2 | tablespoons | Olive oil |
3 | Garlic cloves, minced | |
2 | tablespoons | Parsley, dried |
½ | teaspoon | Oregano, dried |
10 | Anchovie fillets, chopped | |
1 | cup | Kalamata oilves, sliced |
1 | Hot red pepper-small, minced | |
2 | teaspoons | Capers |
Salt and pepper to taste | ||
Cooked spaghetti |
Directions
~----------------------Tomato Sauce - Harlot Style------------------------ Before anything, open the canned tomatoes and chop into small pieces. Start cooking the spaghetti per package directions. Meanwhile, saute the garlic in the olive oil till bubbly, but not brown. Add the tomatoes, parsley, oregano, olives, peppers, anchovies, and capers. Stir and simmer for 10 minutes or until thickened a bit. Season to taste with salt and pepper.
Drain the pasta when done cooking, toss with the sauce and sprinkle with some parmesan, if you really must. I think it detracts from the flavors of the sauce.
