100 grams Grated carrot
100 grams Grated courgette
100 grams Grated potato
1 tablespoon Plain flour
Salt and pepper to taste
Vegetable oil

Directions

Squeeze out excess moisture from the grated vegetables - the best way is to lay them on several sheets of kitchen paper and then cover with more paper and press down. Mix the vegetables together in a bowl with seasoning and flour.

Heat the oil in a frying pan and fry heaped tablespoons of the mixture, flattening them with a fork to make spiky round croquettes. Saut‚ for about 5 minutes, turning halfway through. They should be golden on the outside and cooked inside.
