Mini-melba pizzas

Ingredients

Quantity Ingredient
½ cup No-salt added tomato sauce
½ teaspoon Dried oregano
½ teaspoon Dried basil
24 eaches Whole grain melba toast rounds
6 mediums Fresh mushrooms; thinly sliced
2 eaches Green onions; sliced
¼ cup (1 oz.) Healthy Choice fat- free mozzarella shreds
¼ cup (1 oz.) Healthy Choice fat- free cheddar shreds

Directions

Combine first 3 ingredients in a small bowl; stir well. Place melba toast rounds on a baking sheet. Spread 1 teaspoon tomato sauce mixture on each round. Evenly distribute mushrooms, onions, and cheeses over tomato sauce. Bake at 400 degrees for 3 minutes or until cheese softens. Yield: 24 snacks.
