Mint and rosemary jelly

Ingredients

2 | cups | Packed mint leaves |
¼ | cup | Rosemary leaves |
1 | cup | Water |
¾ | cup | Orange juice |
3 | cups | Sugar |
Green food colouring (optional) | ||
1/2 bottle liquid pectin | ||
Rosemary sprigs for garnish |
Directions
chop mint and rosemary. Place in large saucepan, add water, and orange juice. Bring to boil. Remove from heat. Let stand 10 minutes to infuse.
Strain mixture and return mint infusion to saucepan; add sugar and food colouring (if using) bring to boil. Stir in pectin and bring back to full rolling boil. boil vigourously for 1 minute.
