Moist date and walnut cake

Ingredients

125 grams Raisins
250 grams Dates; chopped
185 grams Sultanas
275 grams Unsalted butter
1 400 gram tin sweetened condensed milk
275 millilitres Water
60 grams Walnuts; chopped
150 grams Plain flour
150 grams Wholemeal self-raising flour
½ teaspoon Bi-carbonate of soda
60 grams Glace cherries; halved
1 tablespoon Orange marmalade

Directions

1. Place raisins, dates, sultanas, butter, condensed milk and water in a large saucepan and bring to the boil. Simmer gently, stirring occasionally, for 5 minutes. Set aside to cool.

2. Pre-heat oven to 180deg.C. Line a 30cm X 20cm cake tin with Glad Bake.

3. Sieve flours and bi-carbobnate of soda into a large mixing bowl. Add fruit mixture with cherries and marmalade and mix well. Spoon into prepared tin and bake about 30-40 minutes or until golden on top and cooked when tested with a wooden skewer. Remove from oven and cool on a wire rack.
