Moroccan marinade

¼ | cup | Finely-chopped fresh parsley |
Juice of 3 lemons, strained | ||
Grated peel (no white attached) of 2 lemons | ||
Grated peel (no white attached) of 2 oranges | ||
1 | teaspoon | Turmeric |
2 | teaspoons | Saffron |
1 | teaspoon | Ground coriander |
1 | teaspoon | Paprika |
1 | teaspoon | Ground cinnamon |
2 | teaspoons | Cumin seeds |
Salt and freshly-ground black pepper |
Directions
In a large bowl, combine all ingredients. Season to taste with salt and pepper.
Yield: 1½ cups
