Mr food's vegetable chili

Ingredients

1 tablespoon Olive oil
1 large Onion -- chopped into 1/2

1 Can(28oz)
Undrained
cup Picante sauce
teaspoon Chili powder
teaspoon Ground cumin
¾ teaspoon Salt
2 Cans(16oz)
1 large Red bell pepper -- chopped
1 large Zucchini -- cut into chunks
1 medium Squash, summer -- cut into
Chunks(opt)
Tomatoes, canned -- crushed;
Red kidney beans -- drained

Directions

In a large saucepan, heat the oil over medium heat. Saute the onion for 2 to 3 minutes. Add the tomatoes, picante sauce, chili powder, cumin, and salt. Reduce the heat to low, cover, and simmer for 10 minutes. Add the remaining ingredients, cover, and simmer for 10 more minutes. Serve with additional picante sauce, if desired.

Yield: 6 to 8 servings
