Directions
Combine sugar, margarine, vanilla and rum extract with egg until light and fluffy. Blend in combined flour and nutmeg. Cover bowl with plastic wrap and refrigerate 30 to 45 minutes. Divide dough into six pieces. Shape each piece on a lightly floured surface into long rope, ½ inch in diameter. Cut into 3-inch lengths. Place on ungreased cookie sheet and bake at 350 degrees F for 12 to 15 minutes or until light golden brown. Cool on rack. Frosting: Combine 2 cups powdered sugar, 3 tbsp. margarine, ¾ tsp. rum extract, ¼ tsp. vanilla and 2 to 3 tbsp. cream or milk. Stir until smooth and spread on top and sides of cookies. Mark frosting with tines of fork to resemble bark.
Sprinkle lightly with nutmeg. Allow frosting to set before storing tightly in covered container. Makes 4½ to 5 dozen cookies. Source: Pillsbury Holiday Cookbook
