Oaty vegetable soup

Ingredients

Quantity Ingredient
½ ounce Butter
1 medium Carrot; chopped
1 medium Turnip; chopped
1 medium Onion; chopped
1 Leek; chopped
1 ounce Oatmeal
1 pint Meat stock or broth
¾ pint Milk
Salt & pepper to taste
Parsley; chopped

Directions

Melt the butter in a large saucepan. Add the vegetables and sweat in the butter over a very gentle heat, with the lid on, for 5 minutes.

Stir in the oatmeal and cook for a further few minutes. Pour in the stock and stir well. Bring to the boil, then reduce the heat and simmer, covered, for 45 minutes. Add the seasoning and the parsley.

Finally add the milk, reheat gently, and serve piping hot. Serves 4.
