Old-fashioned southern-style greens

4 servings

Ingredients

Quantity Ingredient
2 pounds Mixed greens; see * Note
1 pounds Smoked ham hock or 1/2 lb bacon
1 Onion; chopped
5 slices Bacon; fried with
Bacon drippings
3 cups Water
2 teaspoons Vinegar
Salt and pepper; to taste

Directions

* Note: Mustard greens, turnip greens, beet greens, collards, kale, Swiss chard, dandelion, etc.

Add the ham hock and bacon to water and boil uncovered for about 40 minutes, or until the water is reduced by half. Meanwhile, trim and wash the greens in at least three changes of water to remove the dirt and grit.

Add greens, onion and vinegar to the water and simmer slowly for about an hour. Season with salt and pepper to taste. Discard ham hock or bacon and drain greens before serving. Serves 4.

Comments: For additional flavor, add turnips, new potatoes, or additional bacon drippings during cooking. Recipe Source: Home & Garden TV -- Home Grown Cooking - Episode 152 Formatted for MasterCook by Nancy Berry - cwbj78a@...
