Old-time tea cakes

1 | cup | Sugar |
½ | cup | Butter |
1 | Egg | |
4 | tablespoons | Buttermilk |
¼ | teaspoon | Salt |
1 | teaspoon | Each: vanilla and lemon extract |
2½ | cup | All-purpose flour; (up to 3) |
1 | teaspoon | Baking soda |
Directions
Notes: From Houston (Texas) Chronicle.
Preheat oven to 400 degrees. Cream sugar and butter. Add egg, buttermilk, salt, vanilla and lemon extract. Mix well. Mix flour and soda and add enough flour to make a dough you can handle well. Roll out thin and cut with cookie cutters or drop from a teaspoon onto cookie sheet. Sprinkle tops with sugar if desired. Bake 10 to 15 minutes.
