Orange cream sauce for berries or poached pears

½ cup Orange juice
1 tablespoon Grated orange rind
1 Lemon; juice of
¼ cup Castor sugar
1 tablespoon Butter
1 Egg well beaten
150 grams Cream; whipped

Directions

Mix all the ingredients except the cream and cook over low heat, stirring with a wooden spoon until the mixture coats the back of the spoon. Allow to cool thoroughly then mix in the beaten cream.
