Poached pears with butterscotch sauce

Ingredients

Quantity Ingredient
750 grams Conference pears; peeled, halved and
; cored (1 1/2lb)
150 millilitres White wine; (1/4 pint)
2 tablespoons Caster sugar
50 grams Butter; (2oz)
75 grams Soft dark brown sugar; (3oz)
2 tablespoons Golden syrup
142 millilitres Double cream; (5 floz)
Fresh mint sprigs to decorate; optional

Directions

Place the wine and sugar in a saucepan and stir until dissolved. Add the pears, cover and simmer gently for 15 minutes, turning occasionally, until tender. Remove from the pan and allow to cool.

Meanwhile, melt the butter, brown sugar and syrup in a saucepan, stirring occasionally. Boil for 2-3 minutes, then stir in the cream. Serve the sauce hot or cold with the pears.
