Orange glazed lamb

Directions
Squeeze the juice from 3 large oranges and stir in 1 teaspoon of sugar.
Season 4 lamb steaks (slices off the leg) well and dust them lightly with plain flour. Heat a little oil and butter together in a large frying pan.
Add the steaks and cook until well browned, then turn and cook the second side until browned. When steaks are cooked to your liking, transfer them to a warmed serving platter and keep hot.
Add the orange juice to the pan and bring to a boil, stirring all the cooking sediment off the pan. Boil until the juice is reduced by half or slightly more. Taste for seasoning, pour over the lamb steaks and serve at once.
