Orange rice with scallops

Ingredients

Quantity Ingredient
cup Orange juice (fresh squeezed is best)
cup Water
cup Uncle Ben's special Blend Rice Trio
1 3/16 ounce Julienned sun-dried tomatoes (NOT packed in oil!)
pounds Sliced mushrooms (fresh is best, canned is ok)
½ pounds Fresh calico scallops, rinsed & drained
1 each Mix orange juice and water, bring to boil in stir-fry pan or saucepan.
Add rice and tomatoes.
2 eaches Cover and simmer 5 minutes. Stir in mushrooms (if fresh).
3 eaches Cover and simmer 10 more minutes. Stir in scallops (and
Mushrooms, if canned).
4 eaches Cover and simmer on low, stirring occasionally until
Rice is cooked and all liquid is absorbed.
fluid ounce With fork before serving.
Fat free & ever so yummy!
