2 | Spring onions | |
¼ | cup | Chopped parsley |
¼ | cup | Chopped mint |
¼ | cup | Chopped coriander |
¼ | cup | Lime juice |
140 | grams | Coconut milk |
Directions
Place salmon steaks in a large frying pan and cover with boiling, salted water.
Bring to the boil and turn off the heat. Leave steaks in water for 5 minutes. Drain well.
Soak cracked wheat in cold water for 30 minutes.
Wash spring onions and slice finely.
Drain cracked wheat and add spring onions, parsley, mint and coriander.
Stir through lime juice and coconut milk.
Remove skin and bones from salmon.
Flake into large pieces.
Fold cracked wheat mixture through salmon.
