Pan-fried tuna with salsa

Tuna steaks | ||
1 | cup | Flour |
1 | teaspoon | Cayenne |
1 | teaspoon | Black pepper |
1 | teaspoon | Onion powder |
1 | cup | Oil |
½ | teaspoon | Cayenne |
1 | teaspoon | Garlic powder |
1 | tablespoon | Dill, dried |

1 | tablespoon | Parsley, dried |
1 | tablespoon | Butter |
Directions
FLAVORED FLOUR
FRYING MIXTURE
Dip each tuna steak or fillet portion in the flavored flour to coat.
Then dip in egg-milk wash and then in stale crushed bread crumbs.
Place on a rack for 10 min for coating to set.
Heat frying mixture in a skillet. Pan fry tuna til golden. Turn and finish. Serve with a few drops of pan liquor and top each piece with a spoon full of Salsa. Garnish with lemon or lime wedges.
