Ingredients

6 | smalls | Baking potatoes, scrub and cut into 8 wedges |
2 | tablespoons | Butter |
¼ | cup | Parmesan cheese, freshly grated |
Salt & pepper to taste |
Directions
Preheat the broiler. Line a broiler pan with aluminum foil. Bring a large pot of water to a boil over high heat. Drop the potatoes into the boiling water and partially cover the pot. When the boil returns, cook for 4 minutes, drain. Toss in a large bowl with the butter.
Arrange the potato wedges in a single layer on the prepared pan.
Sprinkle half of the parmesan cheese on potatoes. Broil for 5 - 10 minutes, until deep golden brown. Judge by color. Turn the potatoes and sprinkle with the remaining parmesan. Broil for 5-8 minutes longer, until deep golden brown. Serve hot with salt and pepper to taste. May serve with ranch type dip or sour cream if desired. Shared by: Bill Jernigan
