Pasta with fresh favas and pancetta

Ingredients

⅓ | cup | Minced shallots |
3 | tablespoons | Olive oil |
2 | Garlic cloves; minced | |
6 | ounces | Pancetta; diced |
6 | ounces | Shelled; peeled fresh fava beans |
½ | cup | Chicken stock or broth |
3 | tablespoons | Minced fresh chervil or tarragon |
12 | ounces | Cooked pasta |
Freshly-grated Parmesan; as an accompaniment |
Directions
In a large skillet set over moderate heat cook the shallots in the olive oil, stirring, for 2 minutes. Add the garlic and cook for 1 minute more.
Add the pancetta and cook until lightly colored. Add the fava beans and chicken broth and simmer until beans are heated through. Stir in the herbs.
Add pasta to pan and toss to coat well with sauce. Transfer to a serving dish and accompany with the Parmesan. This recipe yields 4 servings.
