Pasta with grilled vegetables

Ingredients

8 ounces Spaghetti -- uncooked
3 tablespoons Olive oil -- divided
1 large Garlic clove -- minced
2 smalls Zucchini -- cut in 1/4\"
Slices
1 Red bell pepper -- seed &
Cut in 1/2\"
¼ pounds Mushroom -- sliced
3 tablespoons Fresh basil -- chopped
1 tablespoon Lemon juice
2 teaspoons Lemon peel -- grated
½ tablespoon Salt
¼ teaspoon Black pepper

Directions

Heat grill or broiler. Meanwhile, cook spaghetti in boiling salted water according to package directions until just tender. In a cup mix 1 Tbs oil and the garlic. Arrange vegetables on a grill grid or broiler rack. Brush vegetables with oil mixture and cook until tender; turning once, 6 to 8 minutes. Place in a large bowl. Add remaining 2 Tbs oil, the chopped basil, lemon juice, lemon peel, salt and pepper. Drain spaghetti and add to vegetables in bowl. Toss to combine. Garnish with basil and serve with cheese.
