Paul's filled cookies

Ingredients

1 | cup | Sugar |
½ | cup | Shortening |
1 | Egg | |
½ | cup | Milk |
3½ | cup | Flour |
2 | teaspoons | Cream of tartar |
1 | teaspoon | Soda |
1 | teaspoon | Vanilla |
2 | cups | Dates, chopped |
¾ | cup | Sugar |
¾ | cup | Warm water |
dash | Lemon juice | |
2 | tablespoons | Flour |
Directions
FILLING
Mix cooky ingredients together in large bowl.
Roll out on lightly floured board to a thinner thickness than regular cookies. Cut with any large round cutter that is big enough to cover the filling (about 2½ to 3 inches in diameter).
Place one round on cookie sheet and place about 1 tsp of filling in the center. Dampen the edges with water and lay second round over the top.
Press the edges together to seal.
Bake at 375øF for about 15 minutes or until they start to turn light brown.
Cool on a rack. (If they last that long... ;+}) ** Filling **
Mix the filling ingredients together in a saucepan over medium heat. Cook until the dates have soaked up the sugar/water liquid. Remove from heat and allow to cool.
Optional fillings:
: Mix 1 cup of dates and 1 cup of raisins. Blend with other filling ingredients and cook. This makes a mincemeat flavor filling.
: Use your favorite preserves: grape, strawberry, cherry, raspberry, apple, etc... DO NOT USE JELLY.
