Pecan puffs

Ingredients

Quantity Ingredient
1 cup All-purpose flour
1 cup Pecans
½ cup Butter or margarine (not spread); at room temp.
2 tablespoons Granulated sugar
1 teaspoon Vanilla extract
Confectioners' sugar

Directions

1. Heat oven to 300F. Have ungreased cookie sheets ready.

2. Process flour and pecans in a food processor or blender until nuts are very finely chopped.

3. Beat butter, sugar and vanilla in a large bowl with electric mixer until pale and fluffy. With mixer on low speed, gradually beat in flour mixture just until blended.

4. Roll level tablespoonfuls dough into balls. Place about 1 inch apart on cookie sheets.

5. Bake 45 minutes or until golden. While warm, roll in confectioners' sugar. Place on wire rack to cool completely, then roll in confectioners' sugar again. Store airtight up to 2 weeks or freeze.
