Peel a pound soup (vegan)

Ingredients

Quantity Ingredient
1 small Head cabbage
4 larges Onions
2 cloves Diced garlic
1 Bunch celery
1 large Green pepper
1 large Can diced tomatoes
2 mediums Potatoes
4 Carrots
1 Box (2pk) onion soup mix
3 cups Vegetable stock

Directions

Clean veggies and cut into medium sized pieces. Add all ingredients to soup kettle and finish filling with water until it just covers the vegetables. Bring to a boil, and then reduce to a simmer and cook for 2½ - 3 hours.
