Pina colada tofu pie

Quantity | Ingredient | |

1 | \N | Pie crust (regular or graham cracker) |
1 | pounds | Tofu, cut up and drained |
1½ | tablespoon | Oil |
⅓ | cup | Plus 2 tbsp honey |
1½ | teaspoon | Cornstarch |
1 | teaspoon | Vanilla |
1¼ | cup | Drained vrushed pineapple |
¾ | cup | Shredded unsweetened coconut |
Tofu makes this a healthy dessert without sugar. Great for people on restricted diets.
Blend well all ingredients. Bake at 350 F for 20-30 minutes. Let cool to set.
