Pina colada tofu pie

Quantity Ingredient
1 \N Pie crust (regular or graham cracker)
1 pounds Tofu, cut up and drained
tablespoon Oil
cup Plus 2 tbsp honey
teaspoon Cornstarch
1 teaspoon Vanilla
cup Drained vrushed pineapple
¾ cup Shredded unsweetened coconut

Tofu makes this a healthy dessert without sugar. Great for people on restricted diets.

Blend well all ingredients. Bake at 350 F for 20-30 minutes. Let cool to set.
