Pizza quesadillas

6 | Flour Tortilla | |
1 | cup | Mozzarella Cheese; Shredded |
2 | Plum Tomatoes; Seeded And Diced | |
6 | tablespoons | Greek Olives; Coarsely Chopped |
3 | tablespoons | Fresh Basil; Chopped |
Directions
Preheat the oven to 200 degrees. Heat a medium nonstick frying pan over medium-low heat. Place 1 tortilla in the pan. SPrinkle with ⅓ cup of the cheese, then top with ¼ cup tomatoes, 2 tbsp olives and 1 tbsp basil.
Cook until the cheese is almost completely melted, about 1 minute. Place a second tortilla over the top. Using a spatula, turn and cook until the underside is lightly browned. Place in the oven to keep warm while making 2 more. Cut each into 8 wedges and serve hot.
