Pizza quesadillas

6 Flour Tortilla
1 cup Mozzarella Cheese; Shredded
2 Plum Tomatoes; Seeded And Diced
6 tablespoons Greek Olives; Coarsely Chopped
3 tablespoons Fresh Basil; Chopped

Directions

Preheat the oven to 200 degrees. Heat a medium nonstick frying pan over medium-low heat. Place 1 tortilla in the pan. SPrinkle with ⅓ cup of the cheese, then top with ¼ cup tomatoes, 2 tbsp olives and 1 tbsp basil.

Cook until the cheese is almost completely melted, about 1 minute. Place a second tortilla over the top. Using a spatula, turn and cook until the underside is lightly browned. Place in the oven to keep warm while making 2 more. Cut each into 8 wedges and serve hot.
