Plum orange conserve

½ | Orange, unpeeled | |
2 | tablespoons | Water |
2 | cups | Coarsely chopped (unpeeled) plums |
1½ | cup | White sugar |
¼ | cup | Seedless raisins |
1 | tablespoon | Lemon juice |
Directions
Wash orange and cut into thin wedges; thinly slice, discarding any seeds. In 8 cup measure, combine orange and water. Microwave, uncoverd, on high for 2 minutes, or until rind is tender. Stir in plums, sugar, raisins and lemon juice. Microwave, uncovered and stirring every 3 minutes, on high, for 15-18 minutes, or until thickened enough that a spoonful isn't runny after sitting on a plate for a minute. Fill, seal and stor jar in refrigerator for up to 1 month. Makes 2 cups.
