Plum tomato salad with red mullet and chorizo

2 Red mullet fillets
2 Chorizo sausages; sliced
3 Ripe plum tomatoes; sliced
3 Thinly-sliced red shallots
Pesto sauce
Saffron
1 teaspoon Crushed garlic
Yolk of one egg
4 tablespoons Warm mashed potatoes
Olive oil

Directions

SAFFRON SAUCE

To make the sauce, mix the egg yolk with the warm mashed potato, garlic, a pinch of saffron and the olive oil.

Season the red mullet fillets and then place thin slices of the chorizo on top. Pop this under the grill. Put a circle of tomato slices on to a plate and pour the saffron sauce in the middle.

Add some salad if you like, put the grilled fish and sausages on top and finish with some pesto sauce.
