Poached pears with cider sauce

6 | Firm pears; stems intact | |
½ | gallon | Apple cider |
1 | Cinnamon stick | |
1 | Vanilla bean; spilt | |
2 | slices | Ginger root |
Mint leaves; for garnish |
Directions
Peel pears and core from bottom. Slice small piece off bottom so pears can stand upright. Place in bowl of cold water with the juice of half a lemon.
Bring cider, cinnamon, vanilla and ginger to a simmer. Add pears and simmer covered for 15 minutes or until just tender. Remove pears to a platter.
Bring cider to a boil and reduce to a syrupy consistency about 1½ cups.
Remove vanilla, cinnamon and ginger, and pour glace over fruit. Allow to cool to room temperature and garnish each pear with mint.
