Potato-bacon cups

12 | ounces | Potatoes; cooked & mashed |
1⅓ | cup | Cottage cheese; low fat |
4 | slices | Turkey bacon; crumbled |
¼ | cup | Skim milk |
½ | teaspoon | Garlic powder |
¼ | teaspoon | Rosemary; crushed |
¼ | teaspoon | Salt |
⅛ | teaspoon | Black pepper |
Directions
1. Preheat the oven to 350 degrees. Spray 4 6oz custard cups with nonstick cooking spray. Place the cups on a baking sheet.
2. In a medium bowl, combine all the ingredients. Divide evenly among the prepared cups. Bake for 30 to 35 minutes, until the tops are golden brown.
Each serving provides: 1 P, 1 B, 35 C. Per serving: 167 cal, 14g pro, 3g fat, 20g car, 13mg chol, 638mg sod.
Night before: Place the potato mixture in cups. Cover and refrigerate.
