3 | xes | Egg yolks |
1 | pounds | Butter, fresh |
¾ | cup | Water |
2 | tablespoons | Lemon juice |
1 | x | Jam or jelly |
Directions
Divide flour. Beat eggs well and add, together with lemon juice and water to ½ of the flour. Knead until smooth and blistery, about 20 min.. Roll out on well floured board to about ⅛" thick. Work butter into remaining flour until mixture forms a ball. Spread this mixture on rolled dough until it is all covered. Then fold three times as you would a handkerchief. Place in wax paper and refrigerate for 2 hours.
Remove and repeat above process. Refrigerate for one hour, and then repeat again until dough has been rolled four times. Roll dough thin, cut into squares, about 3 inches in size, fill with jam, jelly or nut filling. Fold in a triangle, sealing edges well, place on a baking sheet and bake about 7-8 min. at 400 deg.
