4½ | cup | Flour |
2 | cups | Unsalted butter; diced (1 pound) |
1 | teaspoon | Salt |
1 | cup | Plus 2 tablespoons cold water |
Directions
Place flour, diced butter, and salt in a large mixing bowl. With your fingertips, mix the butter into the flour to make a coarse meal. It's all right if you still have some large pieces of butter. Pour in about 1 cup of water, just enough to moisten the dough. Mix the dough with a fork just to moisten.
Pour dough onto a floured board. Form into a rough rectangle. Fold over one third of the dough toward the center. Fold the other third over toward the center. Turn the dough 90 degrees. Sprinkle with flour and roll out into a rectangle about 20 by 6 inches. Fold the dough by thirds again. Again rotate 90 degrees, flour, and roll out. Repeat the process two more times.
Chill the dough for at least 1 hour before rolling out. You may also freeze the dough. Cut it into smaller pieces before freezing.
