Pumpkin and vegetable chowder

1 large Onion; chopped
¼ cup Corn oil
1 tablespoon Tamari sauce
1 Ripe tomato; peeled and diced
4 cups Vegetable stock
4 cups Pumpkin; pureed or in chunks
1 tablespoon Maple syrup
1 bunch Broccoli; steamed and
; coarsely chopped
½ cup Heavy cream
Salt and freshly ground black pepper to
; taste

Directions

In a large pot, cook the onion in the oil until it is translucent.

Add the tamari sauce, tomato, stock, pumpkin, and maple syrup and combine well. Simmer for 30 minutes. Add the broccoli and cream and simmer another 10 to 15 minutes. Adjust the seasoning, adding salt and pepper to taste.
