Quick prawn rice

Ingredients

1 tablespoon Olive oil
1 tablespoon Coriander; chopped
1 150 gram long grain rice
100 grams Cooked peeled prawns
Salt and pepper

Directions

1 In a medium pan heat the olive oil with the coriander. Stir through the rice and season.

2 Cover with boiling water, bring back to the boil and simmer for 8-10 minutes until the water is absorbed and the rice cooked.

3 Add the prawns and continue to cook, stirring constantly, for a few minutes to heat through. Season to taste and serve.
