Quick summer pudding with strawberries

Ingredients

1 | kilograms | Defrosted frozen mixed berries |
1 | pounds | Strawberries |
½ | Loaf medium sized white bread | |
16 | ounces | Caster sugar |
Fresh mint | ||
150 | millilitres | Double cream |
Directions
Make a quick stock syrup using 100g sugar to 200ml water, bring to the boil and leave to one side. Puree half the berries with some stock syrup and pass to make a coulis.
Chop half the strawberries and mix with half the berries left over and sweeten with a little sugar and some chopped mint. Line a pudding mould with clingfilm then with the white bread, dipping it in the coulis to make it stick. Top off with bread.
Turn out of the mould, pour over the sauce and garnish with fresh fruit.
