Raisin coconut loaf

Ingredients

Quantity Ingredient
3 cups Flour, all-purpose
1 tablespoon Baking powder
1 cup Sugar
1 teaspoon Salt
1 cup Raisins, dark or golden
1 cup Coconut, flaked; toasted
1 Egg
cup Milk
teaspoon Vanilla extract

Directions

Combine flour, baking powder, sugar, and salt. Stir in raisins and coconut. Beat egg until foamy and mix with milk and vanilla. Stir into dry ingredients and mix thoroughly, but do not beat. Pour into greased 9x5x3" loafpan, and bake at 350 degrees for 1 hour and 10 minutes.
