Red snapper in foil

4 | pounds | Red snapper, cleaned and boned |
2 | tablespoons | Corn oil Salt and pepper to taste |
¼ | cup | Butter |
½ | cup | Chopped celery |
¼ | cup | Finely chopped green pepper |
2 | Scallions, chopped | |
1 | cup | Bread crumbs |
2 | tablespoons | Chopped parsley |
¼ | cup | Coarsley chopped toasted almonds |
1 | large | Tomato, skinned and sliced |
6 | Thin slices onion | |
6 | Thin slices orange | |
6 | Thin slices lime | |
½ | Lime, juice of |
Directions
Preheat broiler. Rub fish lightly with corn oil. Sprinkle inside and out with salt and pepper. Saute celery, green pepper and scallions 3 minutes. Add bread crumbs, parsley and almonds. Press mixture together, then stuff fish. Fasten closed with toothpicks. Brush a large sheet of aluminum foil lightly with oil; palce fish on it and arrange tomato, onion, orange and lime slices down the length of the fish, overlapping. Seal foil tightly and cook 30-40 minutes.
