Renaissance pizza

Ingredients

2 cups Carrots; peeled and grated
1 cup Onions; finely diced
2 tablespoons Garlic; minced
12 cups Celery; finely diced
2 tablespoons Olive oil
teaspoon Salt
¼ teaspoon White pepper
3 packs Dry yeast (3/4 ounce pkg)
cup ;water, warm
1 tablespoon Brown rice syrup or other sweetener
cup Pastry flour
2 tablespoons Dried basil
2 tablespoons Dried oregano
2 tablespoons Dried parsley
3 cups Onions; halved and sliced
2 cups Mushrooms; thickly sliced
2 cups Broccoli stems and florets
1 tablespoon Basil; chopped
1 tablespoon Oregano OR
1 teaspoon Dried oregano
pinch Black pepper
teaspoon Sweetener (syrup)
6 cups Tomato puree
cup Unbleached flour
2 tablespoons Olive oil
1 teaspoon Sea salt
Cornmeal
½ teaspoon Garlic powder
½ teaspoon Black pepper
2 cups Cauliflower pieces
4 tablespoons Olive oil

VEGETABLE TOPPING

Saute the carrots, onions, garlic, and celery in teh oil for about 5 minutes.Add theseasonings and continue to saute for another 5 minutes. Let stand until the yeast starts to foam (10 to 15 minutes).

Mix the two flours together. Then combine the yeast mixture and the flours. Ad the oil, salt and remaining 2 cups of warm water. Knead by hand or use the dough hook on a food processor to make a medium-stiff dough.

(If the dough is too stiff, add more water).

Divide the dough into two even pieces. Lightly oil two large, rectangular pans an sprinkle them with cornmeal. Roll out each piece of dough to an even, rectangular shape to fit the pan. Let the dough rise.

Prebake the pizzas for 5 minutes at 350 degrees F or until the gluten sets in (that is, until the dough springs back). Remove from oven

Spice Mix

Mix the spices together until well blended.

Vegetable Topping

Mix the vegetables together. Saute them for 4 to 5 minutes in the oil. The broccoli should be bright green in color. Remove fromheat and transfer to a second pan ifyou are not using them immediatly.

This recipe should yield about 6 cups of vegetable topping.

Assembling the Pizza

On each pizza, spread about 1½ cups of pizza sauce, add about 3 cups of vegetable topping, sprinkle 2 tsp of pizza spice mix over the sauce. Bake at 375 deg for about 10 minutes, or until the pizza is hot. (If the ingredients are cold when you assemble the pizza, it will take longer to bake.)

Yield: 2 pizzas
