Rice latkes

2 | cups | Brown or white rice, cooked |
2 | Eggs, well beaten | |
3 | tablespoons | Wheat germ or whole wheat flour |
2 | tablespoons | Sugar |
Generous pinch of cinnamon | ||
Oil, for frying |
Directions
Combine all ingredients, mixing thoroughly. Drop by tablespoonful into hot oil and fry on both sides until golden brown. Yields 8-12 latkes.
