Ro*tel king ranch chicken

Ingredients

Quantity Ingredient
1 cup Chopped green pepper
1 cup Chopped onion
½ cup Margarine or butter
2 cans Cream of chicken soup
2 cans Cream of mushroom soup
1 can RO*TEL tomatoes and green
Chilies (10 oz)
3 pounds Chicken
12 eaches Soft corn tortillas torn
Into bite-size pieces
cup Shredded Cheddar cheese

Directions

Stew chicken with salt, pepper, and bay leaf. After cooling and boning cut chicken into bite-size pieces. In a large sauce pan, cook green pepper and onion in margarine or butter until tender. Stir in soups, tomatoes and chicken in 3 quart shallow baking dish (13"x9"), Arrange in 3 alternating layers. Tortillas, soup mixture and ending with a topping of cheese. Bake at 325 F for 40 minutes or until hot and bubbly and cheese is browned. Can be frozen before or after cooking.
