Roast chicken with fresh sage

2 ounces Fresh Sage, Chopped
10 Cloves Garlic, Chopped
3 pounds Roasting Chicken
Juice Of One Lemon
Salt And Pepper To Taste

Directions

Mix fresh sage and garlic. Remove giblets and stuff sage mixture under the skin of the chicken. Place chicken in a shallow baking dish. Squeeze lemon juice in body cavity and over chicken. Season with salt and pepper to taste. Bake at 375øF for 1 hour and 15 minutes until golden brown.
