Juice of one lime | ||

¼ | pounds | Cheese; grated |
8 | Tortillas | |
Filling: | ||
3 | Zucchini; sliced lengthwise | |
3 | Yellow squash; sliced lengthwise | |
3 | Roasted peppers; different colors, | |
Sliced | ||
1 | Eggplant sliced | |
¼ | cup | Chopped basil |
Directions
In large bowl combine all ingredients except cheese and tortillas. Place one tortilla on plate, layer salsa mixture, and cheese, top with another tortilla and top with salsa. Serve.
