Roasted lobster with basil oil - bon appetit

Ingredients

1 cup Fresh basil leaves
cup Olive oil
8 Live lobsters (1 1/2 lb each)

Directions

Bring medium saucepan of water to boil. Add basil and blanch 20 seconds. Drain. Transfer leaves to processor and blend well. With machine running, add 1 C oil through feed tube and blend until smooth. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.) Preheat oven to 400'F. Bring large pot of water to boil. Add 2 lobsters head first; boil 2 minutes. Transfer to cutting board.

Repeat with remaining lobsters, boiling 2 at a time. Turn lobsters so that undersides face up. Using heavy large knife, cut lobsters lengthwise in half. Remove green tomalley (liver), if desired. Place lobsters cut side up on baking sheets. Brush with ½ C olive oil.

Season with salt and pepper. Roast lobsters until cooked through, about 20 minutes. Brush some basil oil over. Serve; pass remaining basil oil separately.
