Roasted red pepper couscous with capocollo

Ingredients

1 | Onion; finely chopped | |
4 | cloves | Garlic; finely chopped |
1 | cup | Roasted red peppers; chopped |
1 | cup | Parsley; chopped |
½ | teaspoon | Red pepper flakes |
2 | cups | Chicken broth |
1 | cup | Couscous |
¼ | pounds | Capocollo; finely chopped |
Salt and pepper; to taste |
Directions
Heat olive oil in large pan and saute onions until tender. Add garlic, red peppers, parsley and red pepper flakes, mixing together.
