Roasted shallots and chestnuts - country living holidays

Ingredients

Quantity Ingredient
½ pounds Shallots, peeled
2 teaspoons Olive oil
teaspoon Salt
1 8-oz jar roasted whole chestnuts
3 Sprigs fresh thyme
6 Bay leaves (opt.)

Directions

1. On rimmed baking sheet, toss shallots with olive oil and salt.

Spread in a single layer and roast in 325'F oven with goose 20 minutes. Add chestnuts and thyme; roast 10 minutes longer.

2. Remove mixture to serving bowl and top with bay leaves, if desired.
