Rocket and melon salad with yoghurt and sesame dressing

Ingredients

Quantity Ingredient
2 Good handfuls rocket leaves
1 Charentais melon; orange flesh
½ Ogen melon; green flesh
2 Oranges
150 millilitres Natural yoghurt
Salt and pepper
1 tablespoon Toasted sesame seeds

Directions

Wash and dry the rocket. Cut the melons into cubes, or balls using a melon baller. Peel and segment the oranges. Spread sesame seeds on a baking tray and toast until golden, either under a hot grill, in a pre-heated oven or dry-fry in a non-stick pan. Season the yoghurt.

Arrange rocket leaves around the edge of a serving plate. Pile melon and orange segments in the centre, and pour yoghurt over the top. Sprinkle with sesame seeds.
